Roots & Fruits Smoothie Recipe by Rochelle Poulson (Cancerpants)

I spent some time this week with one of my favorite friends, Rochelle Poulson. Rochelle is a fellow cancer cowgirl and the star of the documentary film Cancerpants. While reminiscing about our experiences with breast cancer and talking about our future goals, we created some vegan deliciousness in my cowgirl kitchen. She shared her favorite winter drink recipe with me, the Roots & Fruits Smoothie. I loved it so much that I wanted to share with all of you. Not only is this smoothie delicious, but it’s also nutritious, filled to the brim with cancer-fighting phyto-chemicals from local, in-season, and organic vegetables.

Cowgirls in the kitchen! Yeehaw!
Cheers from two smoothie-drinkin’ cowgirls!

Roots & Fruits is the perfect cleansing drink this time of year. It’s tasty, it fills you up, and works perfectly as a meal replacement. On the days I don’t juice greens, love to drink smoothies first thing in the morning. I am doubly thrilled to have to have had some special time with my dear friend Rochelle, and be able to share this special and yummy drink with each of you. Thank you Rochelle and yeehaw!

    1. This smoothie is truly amazing Christine! Just make sure you blend long enough to get the beets and the apple totally liquified. You can also try basil instead of cilantro if you want. I LOVE cilantro in my green juices; it’s one of my favorite herbs. Enjoy!
